Ingredients
14 cup
mayonnaise
1 tbsp
package (one or another):
12 lime or 1 tbsp
lime juice
1 lb (450 g)
boneless, skinless chicken breasts, about 2
1 tbsp
package (one or another):
1 tbsp
oil + more for brushing

potato buns or burger buns
2 cups
baby arugula or spinach

Preparation
  1. Preheat grill to medium-high heat. Lightly brush with oil to prevent sticking.  
  2. In a small bowl, whisk together mayonnaise and dressing mix. Squeeze in lime juice. Set aside. 
  3. Thinly slice chicken by placing one hand on one breast and pressing down firmly. Curve fingers up slightly for safety. Carefully slice meat horizontally. Repeat with remaining chicken. You should have four pieces in total.  
  4. In a large bowl, toss chicken with dry glaze and oil. Grill, with lid closed, 3–4 min per side, or until chicken is cooked through.  
  5. Split and toast buns, if desired. Spread sauce on bottom halves of buns. Top with arugula and chicken.
Tips

No grill? Pan fry chicken in Sauté Pan with 1 tbsp oil over medium-high heat, 4–5 min per side, until golden brown and cooked through.

Potato or Portuguese buns provide a soft but sturdy bun to make a grilled chicken sandwich really sing!
